Easy recipes with eggplants
Eggplants area must in our shopping list. We love them in all their versions, in the oven, in pâte, as garnish, fried… We have tried types such as listed ones, purple and even white ones. We love them all, despite being differences in their taste. We don’t normally wet them in milk or soaked them in water with salt to remove the bitterness as we don’t think they are so bitter or it doesn’t bother us; we think it’s part of their charm. We are introducing a series of recipes with eggplants.
Easy recipes with eggplants
1.- Mutabal, Baba ganoush or eggplant pâte
It is an typical Muslim dish, with subtile difference depending on the placer. It comes from Syria, but we have done the Maghreb version with pomegranate.
We need: egg plants, tahini (sesame paste), sesame oil, garlic, lemon juice, fresh chopped parsley, pomegranate, olive oil and a pinch of salt.
Just roast the eggplants in the oven at 335º F for 20 minutes. Remove the pulp and smash it with a fork. Add the rest of the ingredients and mix them uniformly. Serve it and decorate it with some pomegranate seeds and chopped parsley.

2.- Crispy eggplants
This recipe belongs to Julia y sus recetas and it seems easy to prepare it.
We need: eggplants, breadcrumbs, grated cheese, powdered garlic, mayonnaise, parsley and pepper.
Just batter the sliced eggplants with a mixture of mayonnaise, cheese, breadcrumbs and parsley. Put them in a baking tray and cook them for 15 minutes. So simple, so easy, so tasty!

3.- Mozarella and eggplant Bruschettas
Won’t you like a bruscheta, the Italian toast. I found this recipe at the blog named Cuuking.
We need: eggplants, cherry tomatoes, fresh mozarella, pepper, cumin, olive oil and fresh bread.
Dice the eggplants and braise them in olive oil. Season them with cumin and garlic. Leave them to cool a bit and add tomato and mozarella. Add some salt. Cut the bread, toast it and spread the eggplant mixture on top. Simply delicious!

4.- Parmesan eggplants au gratin
Another classic at home, not if you are on a diet. This version belongs to Les receptes que m’agraden.
We need: eggplants, grated cheese (mozarella), cured cheese (Parmesan), crushed tomato, garlic, onion, salt, pepper, paprika and a pinch of sugar.
In a baking dish, put slices of crushed tomatoes, eggplants and the mixture of cheese following this order. Season every layer of eggplants with salt, pepper and olive oli. Bake it at 335º F for 20 minutes. Can’t be easier!!

5.- Stuffed eggplants
This is one of our favorite dish; I have shared with you the recipe by Hogar y ocio. Easy and tasty!!
We need: medium size eggplants, onions, chicken mince meat, salt, pepper, olive oil and garlic.
Slice the eggplants in halves and roast them for 20 minutes. Then remove the pulp and put it aside. Do a sofrito and add the meat and the eggplant pulp and cook until ready. Stuff the eggplants with the mixture and dust them with cheese. Grill them for a few minutes.

6.- Eggplants books with ratatouille and walnuts.
One of the biggest hits at the blog. It couldn’t be out of this list.
We need: eggplants, zucchini, pepper, tomato, onion and walnuts.
Without removing the top, slice the eggplants across, as in the image. Roast them wrapped in foil for 25 minutes. In the meantime, chop the vegetables and sauté them in olive oil. Once this is done, stuff every side of the eggplant as shown in the picture. You may eat it cold or hot. You’ll love them!
